Fresh Tomato and Basil Pasta

I have a wonderful little basil plant growing on my patio and when I have fresh tomatoes from the farmers market I always make this pasta. This pasta is great served with grilled chicken or shrimp.

The recipe is super simple.

Serves 2 to 4 (depending on how hungry you are)

Prepare 1/2 box of Jovial Einkorn spaghetti or Jovial Gluten Free Capellini according to the directions. It is best to break the pasta in half before cooking.

Heat 2 tbsp olive oil in a ceramic skillet.

Add 1 tbsp minced garlic

Cook for about 2 minutes on medium high.

Dice 1 large farmers market tomato, add to the pan and simmer for about 5 to 7 minutes

Sprinkle with salt and fresh cracked pepper to taste. add in a pinch of sugar.

Dice about 7 large basil leaves, add to the pan when the tomatoes are soft, cook for 1 minute

Use a pasta spoon or a fork to transfer the cooked pasta from the water into the pan with the tomatoes. Add 1/4 cup of the hot pasta water.

Toss and serve!
